Prelibato, le condiment balsamique blanc, Acetaia Malpighi utilise la meilleure partie du raisin « Trebbiano Modenese », la méthode de foulage est douce et lente.

Le jus obtenu de ce broyage doux est blanc, transparent et il est filtré pour obtenir le Condiment Balsamique Blanc Prelibato, après cette opération le jus est centrifugé pour le rendre dense sans cuisson et vieilli en fûts de cendre pendant 5 ans. La famille Malpighi a décidé d'utiliser le bois de frêne pour son arôme délicat et sa couleur claire.
