I'm fortunate to have the opportunity to uncover exceptional cheeses, little-known wines and delicious new foods. Exploring the realm of cuisine has so much to present, and when I'm lucky enough to locate something incredible, I'm able to share it with you. A few years ago, in the Emilia-Romagna region of Italy, I stumbled upon the unique mostarda. Despite the title, this sweet-spicy condiment is distinct from well-known mustards ... it's crafted with just regional fruits soaked in sugar and a hint of mustard seed or oil for a lively kick. A variety of fruits and vegetables, like pears, figs, kiwi, red onion, orange, apples, plum, strawberry, and even watermelon rinds, have been used to make mostarda. Each component in this unique dish carries its own unique flavor and texture. The warm, earthy notes of the mustard, juxtaposed with the sweetness of the fruits and veggies, create an experience that is far from simple.
